Easily soluble in water, insoluble in ethanol and ether. 20 ℃ lg the product can be dissolved in 2.5mL water, lOmL glycerol or lOOOmL propylene glycol. Strong hygroscopicity. Comparatively stable, but easy to caking and coloring at high temperature. Stable under acidic conditions, easy to decompose under alkaline conditions in the presence of reducing sugar, easy to color when coexisting with vitamin C or vitamin K3.
